Description

Healthy peanut butter banana muffins are a perfect combination of sweet and savory, making them a delicious snack or breakfast option. Ingredients

2 ripe bananas

120g peanut butter (preferably unsweetened)

1 egg

100g rolled oats (finely ground)

1 tsp baking powder

1 tsp vanilla extract

1 tsp cinnamon

A pinch of salt

30g honey (optional, depending on desired sweetness)

50g nuts or chocolate chips (optional)


Instructions

  • Preheat the oven to 180°C (350°F) and line a muffin tin with paper liners or grease it lightly.

  • Mash the bananas in a large bowl with a fork until almost completely pureed.

  • Add the peanut butter, egg, vanilla extract, and honey (if used) to the bananas and mix well.

  • In a separate bowl, combine the rolled oats, baking powder, cinnamon, and salt.

  • Add the dry ingredients to the wet ingredients and stir until fully combined. If desired, add nuts or chocolate chips.

  • Divide the batter evenly among the muffin cups.

  • Bake for 20-25 minutes or until golden brown and a toothpick comes out clean from the center.

  • Let the muffins cool for a few minutes before removing them from the tin, then transfer them to a wire rack to cool completely.

  • These muffins yield about 12 servings.

  • Storage: Store muffins in an airtight container at room temperature for 3-4 days or in the refrigerator for up to 1 week. They can also be frozen for up to 3 months.
