Ingredients
2 ripe bananas
120g peanut butter (preferably unsweetened)
1 egg
100g rolled oats (finely ground)
1 tsp baking powder
1 tsp vanilla extract
1 tsp cinnamon
A pinch of salt
30g honey (optional, depending on desired sweetness)
50g nuts or chocolate chips (optional)
Instructions

Preheat the oven to 180°C (350°F) and line a muffin tin with paper liners or grease it lightly.

Mash the bananas in a large bowl with a fork until almost completely pureed.

Add the peanut butter, egg, vanilla extract, and honey (if used) to the bananas and mix well.

In a separate bowl, combine the rolled oats, baking powder, cinnamon, and salt.

Add the dry ingredients to the wet ingredients and stir until fully combined. If desired, add nuts or chocolate chips.

Divide the batter evenly among the muffin cups.

Bake for 20-25 minutes or until golden brown and a toothpick comes out clean from the center.
