Description

Ingredients

  • 500 g Gnocchi
  • 2 tbsp Olive oil
  • 1 tsp Paprika powder
  • Salt and pepper to taste
  • 1 Cucumber
  • 1 Red onion
  • 100 g Cherry tomatoes
  • 50 g Feta cheese
  • 2 tbsp Fresh herbs (e.g., parsley or dill)
  • 150 g Greek yogurt
  • 1 tbsp White wine vinegar
  • 1 tsp Mustard
  • 1 tsp Honey

Instructions

  • Cook Gnocchi: Cook gnocchi as per package instructions, drain, and let cool.
  • Marinate Gnocchi: In a bowl, combine olive oil, paprika, salt, and pepper. Toss the cooled gnocchi until evenly coated.
  • Air-fry Gnocchi: Place marinated gnocchi in the air fryer at 200°C for 15 minutes, until golden and crispy (or bake in the oven at 200°C for 20 minutes).
  • Prepare Vegetables: Slice cucumber, finely chop onion, and halve cherry tomatoes.
  • Make Dressing: In a bowl, mix Greek yogurt, white wine vinegar, mustard, and honey. Season with salt and pepper.
  • Assemble Salad: Toss cucumber, onion, tomatoes, and half of the herbs together in a large bowl. Add the crispy gnocchi and drizzle with the yogurt dressing. Gently mix to combine.
  • Serve: Plate the salad, topping with feta cheese and remaining fresh herbs.

Notes

  • You can add grilled chicken or tofu for extra protein.
  • For a vegan version, swap feta with plant-based cheese and yogurt with a non-dairy alternative.
  • To make the salad spicier, add chili slices or a pinch of cayenne pepper to the dressing.
