Ingredients
- 500 g Gnocchi
- 2 tbsp Olive oil
- 1 tsp Paprika powder
- Salt and pepper to taste
- 1 Cucumber
- 1 Red onion
- 100 g Cherry tomatoes
- 50 g Feta cheese
- 2 tbsp Fresh herbs (e.g., parsley or dill)
- 150 g Greek yogurt
- 1 tbsp White wine vinegar
- 1 tsp Mustard
- 1 tsp Honey
Instructions
- Cook Gnocchi: Cook gnocchi as per package instructions, drain, and let cool.
- Marinate Gnocchi: In a bowl, combine olive oil, paprika, salt, and pepper. Toss the cooled gnocchi until evenly coated.
- Air-fry Gnocchi: Place marinated gnocchi in the air fryer at 200°C for 15 minutes, until golden and crispy (or bake in the oven at 200°C for 20 minutes).
- Prepare Vegetables: Slice cucumber, finely chop onion, and halve cherry tomatoes.
- Make Dressing: In a bowl, mix Greek yogurt, white wine vinegar, mustard, and honey. Season with salt and pepper.
- Assemble Salad: Toss cucumber, onion, tomatoes, and half of the herbs together in a large bowl. Add the crispy gnocchi and drizzle with the yogurt dressing. Gently mix to combine.
- Serve: Plate the salad, topping with feta cheese and remaining fresh herbs.
Notes
- You can add grilled chicken or tofu for extra protein.
- For a vegan version, swap feta with plant-based cheese and yogurt with a non-dairy alternative.
