Limonen-Käsekuchen is a refreshing German twist on the classic cheesecake, combining creamy filling with the zesty flavor of lime. Ingredients
200g digestive biscuits or graham crackers (for the crust)
100g melted butter
500g cream cheese (softened)
250g sour cream
100g sugar
3 large eggs
Zest and juice of 2 limes
1 tsp vanilla extract
A pinch of salt

Prepare the crust: Preheat the oven to 180°C. Crush the digestive biscuits or graham crackers and mix with the melted butter. Press this mixture firmly into the bottom of a 24 cm springform pan. Bake for about 10 minutes, then allow it to cool.
