Ingredients

Für den Teig:

  • 1 Bio-Zitrone (Abrieb & Saft)
  • 450 g Blaubeeren
  • 375 g weiche Butter
  • 250 g Zucker
  • 1 Päckchen Vanillezucker
  • 5 Eier
  • 200 g Buttermilch
  • 500 g Mehl
  • 1 Päckchen Backpulver
  • 1 Prise Salz

Für den Cheesecake-Guss:

  • 300 g Puderzucker
  • 150 g Doppelrahmfrischkäse
  • 125 g weiche Butter
  • 1 TL Zitronensaft

Zum Dekorieren (optional):

  • Zusätzliche Blaubeeren
  • Zitronenscheiben

Instructions

1️⃣ Vorbereitung:

  • Backofen auf 180 °C Ober-/Unterhitze (160 °C Umluft) vorheizen.
  • Backform (ca. 30 x 25 cm) mit Backpapier auslegen.
  • Zitrone heiß waschen, Schale abreiben und Saft auspressen (1 TL für den Guss beiseite stellen).
  • Blaubeeren waschen und trocken tupfen.

2️⃣ Teig zubereiten:

  • Butter, Zucker, Vanillezucker und Zitronenschale cremig rühren.
  • Eier, Buttermilch und 3 EL Zitronensaft unterrühren.
  • Mehl, Backpulver und Salz dazugeben und zu einem glatten Teig vermengen.
  • Blaubeeren vorsichtig unterheben.

3️⃣ Backen:

  • Teig in die Form geben und ca. 30 Minuten backen (Stäbchenprobe machen!).
  • Danach vollständig auskühlen lassen.

4️⃣ Cheesecake-Guss:
