Ingredients
4 medium zucchini
200 g grated cheese (e.g., Emmental or Gouda)
150 ml cream
2 eggs
1 onion
1 tsp salt
1/2 tsp pepper
1 tsp dried herbs (e.g., basil or oregano)
1 tbsp oil or butter for greasing the dish
Instructions
-
Preheat the oven to 180°C and grease a baking dish with oil or butter.
-
Slice the zucchini thinly. Optionally, salt the zucchini and let it drain for 15 minutes to remove excess moisture.
-
Dice the onion and sauté it in a pan with oil until soft and translucent.
-
In a bowl, whisk the eggs with the cream, add the grated cheese, salt, pepper, and herbs, and mix well.
-
Layer the zucchini, onion, and cheese-egg mixture alternately in the prepared baking dish until all ingredients are used.
-
Sprinkle extra cheese on top and bake for about 30 minutes, or until golden brown and bubbly.
-
Let the dish cool slightly before serving.
Notes
-
For variation, swap the cheese for Parmesan or Mozzarella.
-
Add other vegetables such as tomatoes, bell peppers, or mushrooms for extra flavor.
-
For a vegan version, use plant-based alternatives for cream and cheese.
