Ingredients

4 medium zucchini

200 g grated cheese (e.g., Emmental or Gouda)

150 ml cream

2 eggs

1 onion

1 tsp salt

1/2 tsp pepper

1 tsp dried herbs (e.g., basil or oregano)

1 tbsp oil or butter for greasing the dish


Instructions

  • Preheat the oven to 180°C and grease a baking dish with oil or butter.

  • Slice the zucchini thinly. Optionally, salt the zucchini and let it drain for 15 minutes to remove excess moisture.

  • Dice the onion and sauté it in a pan with oil until soft and translucent.

  • In a bowl, whisk the eggs with the cream, add the grated cheese, salt, pepper, and herbs, and mix well.
